Add 2 teaspoons of instant or active dry yeast to 1 3/4 cup lukewarm water and let it sit.
In a stand mixer, combine about 5 cups of Caupto's 00 flour, 1 tablespoon sugar, and 1 1/2 teaspoons salt.
Mix the dry ingredients and then add the yeast mixture and 1/3 cup olive oil.
Knead the dough in the mixer for about 3-4 minutes until it pulls away from the sides of the bowl and passes the windowpane test.
Divide the dough into portions for 14-16 inch or 10-12 inch pizzas, rolling each portion into a ball.
Dust the dough balls with flour and place them on a sheet pan or countertop to rest for at least 5 hours, covered with plastic wrap.
Preheat the oven to 550 degrees Fahrenheit with a pizza stone inside.
Stretch or roll out the rested dough and place it on a pizza peel dusted with cornmeal.
Top with sauce and desired toppings, then transfer to the preheated pizza stone in the oven.
Broil the pizza for 5-7 minutes until the crust blackens and the cheese browns.
