Start by making the dressing on the stovetop.
Juice 3 large limes into a bowl.
Add about 3 tablespoons of Greek honey to the lime juice.
Stir the mixture until the honey dissolves in the lime juice.
Add a splash of rose water to the dressing (optional).
Set the dressing aside to cool.
Prepare the strawberries by thinly slicing them and adding them to a bowl.
Pit the cherries using a straw, then halve or slice them thinly and add to the bowl.
Add blackberries and raspberries to the bowl with the other fruits.
If available, add some pomegranate seeds and walnuts for texture.
Once the dressing has cooled, pour it over the fruit mixture.
Gently toss all the ingredients together to combine.
Add fresh mint leaves for flavor and garnish.
