  • 1 cup dried black beans
  • 4 cups water
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 jalapeño, chopped (optional)
  • 2 tbsp olive oil
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions

  1. 1Rinse the black beans under cold water and remove any debris.
  2. 2In the Instant Pot, add the rinsed black beans and water. Close the lid and set to high pressure for 30 minutes.
  3. 3While the beans are cooking, heat olive oil in a pan over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  4. 4Add minced garlic, cumin, chili powder, smoked paprika, salt, black pepper, and jalapeño (if using) to the pan. Cook for another 2-3 minutes until fragrant.
  5. 5Once the beans are done, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  6. 6Open the lid and stir in the sautéed onion and spice mixture into the cooked beans.
