Cut the choclos and remove the husks and silk, setting aside the husks for tying later.

Grind the choclos in a blender, adding half of the eggs, half of the butter, and half of the sugar.

Blend until well mixed and set aside in a bowl.

Add the remaining sugar, anise, ground cinnamon, salt, and grated criollo cheese to the ground choclo mixture and mix well.

Select the most beautiful husks, open them carefully, and use them to form the humitas.

Fill each husk with a spoonful and a half of the choclo mixture, adding a piece of cheese in the center before folding and tying them securely.

Prepare a base of the choclo mixture in the bottom of a pot and place the tied humitas on top.

Add boiled water to the pot and a few pieces of leftover choclo for flavor, then cover the humitas with husks.

Cover the pot and cook for 35 to 40 minutes after it starts boiling.

Check if the humitas are ready by ensuring they are well cooked and white in color.
