Preheat the oven to 400°F.
Combine 1/2 cup of olive oil, 1 tablespoon of lemon juice, 1/4 to 1/2 teaspoon of kosher salt, 1/8 teaspoon of black pepper, 1 tablespoon of minced garlic, 1 teaspoon of chopped fresh rosemary, and 1 teaspoon of chopped fresh thyme in a bowl.
Mix the ingredients together well.
Clean, rinse, and drain 1 pound of medley potatoes.
Toss the potatoes in the bowl with the dressing and herbs until they are well coated.
Pour the coated potatoes into a foil-lined baking dish, ensuring all dressing and herbs are included.
Spread the potatoes out evenly in the dish.
Add garlic cloves and a couple of sprigs of rosemary and thyme on top of the potatoes.
Place the dish in the oven and roast for 30 minutes, tossing the potatoes halfway through the cooking time.
Check that the potatoes are done and tender before serving.
