Seal the chicken thighs skin side down in the hot oil until browned, about 5 minutes on each side.

Remove the chicken from the pan and reserve it.

Add the julienned onion to the pan and lower the heat slightly.

Cook the onion until it is soft and cooked.

Return the reserved chicken to the pan with the onions.

Add beer to the pan, using your favorite type.

Allow the mixture to cook on low heat, semi-covered, until the alcohol evaporates and the liquid reduces.
