Warm up 160 grams of one percent milk to around 100 degrees Fahrenheit.
Add 6 grams of instant yeast to the milk and mix together, then set aside.
In a bowl on a scale, add 300 grams of flour, 50 grams of sugar, and 6 grams of salt, and mix them roughly.
Add the yeast and milk mixture and a beaten egg to the flour mixture.
Using your hands, mix until a shaggy dough forms and no dry flour remains.
Add 56 grams of softened butter to the dough and work it in until fully incorporated.
Turn the dough out onto a floured work surface and flatten it slightly, then fold it into itself and shape it into a ball.
Place the dough back in the bowl and let it rise until doubled in size, about 60 to 90 minutes.
After rising, roll the dough out into a circle about 1 inch thick.
Use a large mouth mason jar or cup to press out buns and place them on a greased baking sheet.
For burger buns, cut the dough into roughly 85 gram pieces and form them into tight balls with the seam side down.
For dinner rolls, place six balls on a quarter sheet pan so they are close together.
Cover the shaped buns and let them rise until roughly doubled in size again, about 60 to 90 minutes.
Preheat the oven to 400 degrees Fahrenheit.
Place the buns in the oven and set a timer for 10 minutes.
After 8 minutes, pull the buns out and brush them with melted butter mixed with dried rosemary and garlic powder.
Return the buns to the oven for another 4 minutes until nicely browned.
