Preheat the oven to 450 degrees.
In a bowl, combine roughly 3 and 1/2 cups of flour, 1 teaspoon of salt, and 3 to 4 heaping tablespoons of baking powder. Whisk or sift together until mixed.
Grate 1 cup of butter into the flour mixture until well incorporated, or use a pastry cutter or hands if preferred.
Prepare a cast iron skillet by preheating it and adding butter or baking grease just before placing the biscuits in.
Add a couple of tablespoons of honey to the mixture, adjusting to desired sweetness.
Pour in about 2 cups of buttermilk gradually until reaching a good dough consistency, mixing by hand as needed.
Lightly flour your surface and work in any remaining flour from the bottom of the bowl.
Flatten the dough to about an inch thick, folding it to create flaky layers.
Cut the biscuits using a bench scraper or biscuit cutters.
Place the biscuits in the preheated oven for 18 to 20 minutes or until golden brown.
