Preheat the Blackstone griddle on low heat using three burners.
Prepare baby carrots, cutting some in half and leaving others whole, placing them in a bowl.
Dice three sweet potatoes and add them to the bowl with the carrots.
Add three tablespoons of honey and half a teaspoon of cinnamon to the bowl with the vegetables.
Add a generous amount of butter to the griddle and let it melt.
Once the butter is melted, add the sweet potatoes and carrots to the griddle, mixing them in the butter.
Spread the vegetables out on the griddle and add more butter on top if desired.
Cook the vegetables for about five minutes, stirring occasionally to prevent burning.
After five minutes, check the vegetables for char and doneness, then spread them out again.
Add a bit of water to the griddle and cover with a dome to help steam the vegetables.
Let the vegetables steam for another five minutes, then check again for tenderness.
Stir the vegetables and check for doneness, ensuring they are tender but not mushy.
If needed, cover with the dome again and add more water, cooking for an additional five minutes.
After about 15 minutes total cooking time, turn off the heat.
Add three tablespoons of honey to the vegetables, stirring to coat them evenly.
Sprinkle half a teaspoon of cinnamon over the vegetables and mix well to combine.
Serve the honey glazed sweet potatoes and carrots hot.
