Preheat the oven to 375°F (190°C) and place the cast iron skillet inside to heat up.
In a bowl, combine 1 and 1/3 cups cornmeal and 3/4 cup gluten-free all-purpose flour.
Add 3 tablespoons coconut sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1 teaspoon unrefined salt to the dry ingredients and mix well.
In another bowl, mix 1 and 1/3 cups unsweetened almond milk with the juice of half a lemon to create buttermilk.
Add 2 eggs to the buttermilk mixture and mix well.
Stir in 7 tablespoons of melted butter into the wet ingredients.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Add 1 cup of frozen corn and jalapeños to the batter and mix gently.
Carefully remove the hot cast iron skillet from the oven and add 1 tablespoon of butter to coat the bottom.
Pour the batter into the hot skillet and swirl it around to spread evenly.
Bake for 30 to 35 minutes until golden brown and a toothpick comes out clean.
Let the cornbread rest for 10 to 15 minutes before slicing.
