1 big onion
5 medium potatoes

6 to 8 cups water

1 cup frozen corn

Chop one big onion and set aside.

Heat 2 tablespoons of oil in a pot.

Add chopped onion and garlic to the pot and sauté until fragrant.

Add chopped carrots and half of the cilantro to the pot.

Add 5 medium potatoes, chopped into large pieces, to the pot.

Pour in 6 to 8 cups of water and add 1 teaspoon of salt.

Add half a tablespoon of vasquas to the pot and cover to cook.

Once boiling, add pre-washed orange lentils to the pot.

Add another half tablespoon of vasquas and adjust salt to taste.

Cook until potatoes and carrots are tender, about 30 minutes.

Blend most of the cooked veggies (except potatoes) with some broth until creamy.

Add 1 cup of frozen corn to the blended mixture and stir.

Add pre-chopped cilantro and a splash of vinegar for flavor.

Let the soup sit for a few minutes before serving.
