1/2 cup red capsicum (bell pepper), diced
1/2 cup celery, diced
1/2 cup onion, finely chopped
2 boiled eggs, roughly chopped
1/4 cup coriander leaves, finely chopped + for garnish
1/2 tsp salt
1/2 tsp vinegar
1/2 cup mayonnaise
1 tablespoon lemon juice (3 tsp)
2 tsp Dijon mustard (or yellow mustard)
1 tsp salt, or as per taste
1/2 tsp pepper
1/2 tsp red chilli powder (or cayenne/paprika)
