Wash the potatoes well and peel off the skin.
Cut each potato into three thick slices, then cut each slice into three or four wedge-like pieces.
Put all the cut potatoes into a bowl of water and wash the potato wedges thoroughly, changing the water several times until the water runs clear.
Drain the water completely from the potatoes.
Heat a karai and add enough oil for frying, letting it heat on medium flame.
Prepare the batter for the crispy coating: crush 8-9 garlic cloves using a stone grinder and set aside.
In a bowl, add 1/4 cup corn flour and 1/8 cup flour.
Add the crushed garlic paste, 1 tablespoon of vegetable oil, 1 teaspoon of red chili powder, 7 teaspoons of sesame seeds, and a pinch of food color (optional).
Add salt to taste and mix everything well until combined evenly.
Gradually add a little water at a time to the bowl and mix to make the batter, ensuring it is semi-liquid enough to coat the potatoes well.
Drop in half of the potato wedges into the batter and fry them in two batches.
Fry the first batch for 2 minutes on one side, then flip and cook for another 2 minutes on high flame.
Remove the fried potatoes and set them aside, then repeat the same process with the second batch.
For extra crispiness, add all the fried potatoes back into the leftover batter for a second coating and mix gently.
Fry the potatoes again in batches on medium heat for about 4-5 minutes, stirring occasionally and separating any that are sticking together.
Flip and continue frying until they turn crispy and golden all over.
Remove the fries and drain excess oil, placing them on a plate.
Serve hot with ketchup or your favorite dip.
