Pour milk into a bowl.
Add 1 tablespoon of honey to the milk.
Add 1 teaspoon of salt to the mixture.
Add 75 grams of active and bubbly sourdough starter to the bowl and mix until combined.
Add 3 tablespoons of room temperature butter and blend into the mixture.
Add all-purpose flour and mix until combined.
Knead the dough using a stand mixer with a dough hook attachment on low speed for about 12 minutes until soft and smooth.
Cover the bowl and let the dough rest for 1 hour.
After 1 hour, check the dough for elasticity and smoothness.
Form the dough into a round ball by pulling and stretching it to the center from all sides, then flip it upside down and drag it through the sides of the bowl to create a smooth surface.
Cover the dough and let it rise for 4 hours or until almost doubled in size.
Gently degas the dough, preserving the smoothness of the surface.
Flip the dough onto a lightly floured work surface.
Roll out the dough into a circle approximately 16 inches in diameter.
Make rough markings on the surface to divide the circle easily.
Using a pizza cutter or sharp knife, divide the circle into 8 to 12 equal parts.
Take one triangle and roll from the wider side to form a crescent roll, stretching the dough to create longer and thinner strips for more layers.
Cover the shaped rolls with cling film and let them rise for about 3.5 to 4.5 hours, depending on ambient temperature.
Brush the rolls with egg wash made from 1 lightly beaten egg.
Sprinkle sesame seeds on top of the rolls.
Preheat the oven to 425°F (220°C).
Place the baking tray into the preheated oven and reduce the temperature to 375°F (190°C).
Bake for about 25 minutes, monitoring to avoid overbaking or underbaking.
After baking, brush the rolls with melted butter while still warm to soften the crust.
