Vegetarian Stuffed Peppers

4 large bell peppers
1 cup cooked quinoa
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh or frozen)
1 cup diced tomatoes (canned or fresh)
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded cheese (optional)
2 tbsp olive oil
1/4 cup chopped fresh cilantro (for garnish)

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

In a large bowl, combine the chickpeas, black beans, corn, diced tomatoes, cumin, chili powder, salt, and black pepper. Mix well.

Drizzle olive oil over the mixture and stir to combine.

Stuff each bell pepper with the chickpea mixture, packing it in tightly.

If using cheese, sprinkle it on top of the stuffed peppers.

Place the stuffed peppers upright in a baking dish and cover with foil.

Bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted (if used).

Remove from the oven and let cool for a few minutes before serving.

Garnish with chopped cilantro before serving.
