Chop spring onion finely.

Slice 1 tomato.

Heat butter in a skillet over medium heat.

Pour the egg mixture into the skillet.

Add chopped spring onion and tomato slices on top of the eggs.

Place 1 tortilla on top of the egg mixture.

Sprinkle 30 g of mozzarella cheese on top of the tortilla.

Cover the skillet and cook until the eggs are set and the cheese is melted.
