2 cups thinly sliced celery
1/2 teaspoon salt
1 dried red chili pepper (for garnish, as needed)
1/4 cup rice vinegar
1 tablespoon sugar
1 tablespoon sesame seeds

Peel off strings of celery and slice it as thin as possible.

Sprinkle salt on the sliced celery and let it sit for 5 minutes.

Remove the seeds from the dried red chili pepper and slice it thinly.

In a bowl, add rice vinegar, sugar, and salt, and whisk until mixed.
