Three Bean Chili

1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
2 cups diced tomatoes (canned or fresh)
2 cups vegetable broth
2 tbsp chili powder
1 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper (optional)
1 tbsp olive oil
1 cup corn (fresh or frozen)
Fresh cilantro for garnish (optional)

Heat olive oil in a large pot over medium heat.

Add chopped onion and bell pepper, sauté until softened, about 5 minutes.

Stir in minced garlic and cook for an additional minute until fragrant.

Add the chili powder, cumin, salt, black pepper, and cayenne pepper (if using). Stir to combine.

Pour in the diced tomatoes and vegetable broth, bringing the mixture to a simmer.

Add the black beans, kidney beans, pinto beans, and corn. Stir well to combine.

Cover the pot and let the chili simmer for 30 minutes, stirring occasionally.
