1/2 cup white onion

1 cup water
2 packets taco seasoning
1 can (16 ounces) black beans
1 can (28 ounces) Rotel
9 flour tortillas (8-inch rounds)
1 can refried beans
4 cups freshly shredded cheese (Colby-cheddar mix)

Heat a skillet over medium heat.

Add 2 pounds of ground beef to the skillet and chop it up to start browning.

Chop 1/2 cup of white onion and add it to the skillet with the beef.

Chop 1 poblano pepper and add it to the skillet.

Continue to brown the ground beef and cook the onion and pepper until the onion is translucent.

Strain off any fat from the cooked beef mixture.

Add 1 cup of water, 2 packets of taco seasoning, 1 can of rinsed and drained black beans, and 1 can of Rotel (juice included) to the skillet.

Mix everything together and let it simmer on medium heat for about 10 minutes.

Spray a 9x13 baking pan with cooking spray.

Lay down 2 flour tortillas in the baking pan, tearing one if necessary to cover the bottom.

Dollop on about half of the can of refried beans and spread it out over the tortillas.

Add about half of the beef mixture on top of the refried beans.

Sprinkle on 1 cup of freshly shredded cheese.

Repeat the layers: add more flour tortillas, the remaining refried beans, the remaining beef mixture, and another cup of shredded cheese.

Add one more layer of tortillas on top and finish with the last of the cheese.

Preheat the oven to 350 degrees Fahrenheit.

Cover the casserole with foil sprayed with cooking spray (sprayed side down).

Bake in the oven for about 25 to 30 minutes to heat through and melt the cheese.

For a golden-brown top, turn the oven to broil for the last 2 to 3 minutes of cooking.
