In a large skillet, add 1 pound of lean ground beef and a small diced onion.

Cook until the onion is soft and the ground beef is cooked through.

Add 1.5 teaspoons of minced garlic, a packet of taco seasoning mix, and 2/3 cup of water to the skillet, stirring to combine.

Add in 1 can of drained and rinsed pinto beans and let the mixture simmer until it starts to thicken, then remove from heat and set aside.

In a medium bowl, add 1 egg and break up the yolk.

Add in a 15 ounce container of ricotta cheese and 1 tablespoon of oregano, mixing until well combined, then set aside.

In a separate bowl, combine a 24 ounce jar of salsa and a 10 ounce can of red enchilada sauce, mixing well.

Grease a 9 by 13 inch baking dish and spread a couple spoonfuls of the red sauce mixture into a thin layer at the bottom.

Place a layer of uncooked regular lasagna noodles on top of the sauce.

Spoon on a third of the ricotta cheese mixture, dolloping it out for easier spreading.

Add a third of the meat mixture evenly over the ricotta layer.

Spoon on a third of the red sauce mixture on top of the meat layer.

Repeat the layering process two more times: another third of the ricotta cheese mixture, a third of the meat sauce, and a third of the red sauce mixture.

Cover tightly with foil to seal in the steam and bake at 350°F for 45 minutes.

Remove from the oven, take off the foil, and add 2 cups of shredded cheddar cheese on top.

Return to the oven uncovered for an additional 15 minutes.
