Heat a 12-inch cast iron skillet on high heat.

Add 1.5 pounds of ground chuck to the skillet and cook, breaking it apart with a wooden spoon until almost completely browned.

Add chopped onions and bell peppers to the skillet and continue cooking until the veggies are tender and most of the fat has evaporated.

Drain some of the fat from the pan after the ground beef is done cooking.

Add a can of Rotel and a can of diced tomatoes to the skillet, cooking for about 1-2 minutes before removing from heat.

Spread a small amount of the ground beef mixture over the bottom of the baking dish to prevent the tortillas from burning.

Cut extra large flour tortillas in half and layer them on the bottom of the baking dish.

Spread refried beans across the bottom layer of tortillas.

Add a layer of the ground beef mixture on top of the refried beans, followed by a layer of fiesta blend shredded cheese.

Add another layer of tortillas, tucking them in to cover the meat and cheese.

Spread the remaining ground beef mixture over the top and add more cheese to cover everything.

Place the baking dish in a preheated 350°F oven and bake for about 45 minutes without covering.

After 35 minutes, sprinkle extra cheese on top and return to the oven for an additional 5 minutes to melt the cheese.

Remove from the oven, garnish with green onions and sour cream, and cut into pieces to serve.
