Pickled Young Ginger

2 tsp Sea Salt
2 Cups Rice Vinegar
6 to 8 Tbsp Cane Sugar

Clean and thinly slice the young ginger.

In a bowl, combine the sliced ginger with sea salt and let it sit for a while.

In a separate pot, combine rice vinegar and cane sugar, and heat until the sugar dissolves.
