Heat a stock pot over medium heat and add 3 tbsp of extra virgin olive oil (45 ml).

Cut two slices from a baguette, each 1 inch thick (2.5 cm).

Remove the skins from 4 cloves of garlic.

Add the sliced baguette and garlic to the stock pot and fry for 3 to 4 minutes until golden.

Remove the fried baguette and garlic from the pot and transfer to a mortar.

Roughly chop 1 medium onion and 1 carrot into small bite-sized pieces.

In the same pot, add the chopped onion and carrot and sauté for 3 to 4 minutes, mixing continuously.

Add 1 tbsp of sherry vinegar (15 ml), 1 tsp of sweet smoked Spanish paprika (2.5 grams), and 3/4 tsp of ground cumin (2 grams) to the pot and mix well.

Add 1/2 cup of tomato sauce (120 grams) to the pot and simmer for a few minutes.

Cut 2 medium potatoes into bite-sized pieces that are 1/2 inch thick (1.5 cm).

Add the chopped potatoes to the pot and season with sea salt and freshly cracked black pepper; mix well.

Drain 2 cans of white beans (15.5 oz each, 440 grams) and rinse them under water.

Add the beans to the pot along with enough vegetable broth (3 cups or 720 ml) to barely cover the ingredients.

Add 1 bay leaf to the pot and bring to a boil.

Once boiling, cover the pot and reduce heat to low-medium; simmer for 15 to 20 minutes or until potatoes are cooked through.

Meanwhile, in the mortar with the fried bread and garlic, add 2 tbsp of chopped fresh parsley (8 grams) and a pinch of sea salt; mash into a paste.

After 20 minutes, check the potatoes for doneness; if needed, simmer longer with the lid on.

Add the bread and garlic mixture to the stew and mix gently; simmer for another 1 to 2 minutes to thicken the stew.

Remove from heat and transfer some stew to a shallow bowl; garnish with fresh parsley.
