Preheat the oven to 350°F (175°C).
In a mixing bowl, combine all-purpose flour, baking powder, and salt.
In another bowl, cream together butter and sugar until light and fluffy.
Add eggs and vanilla extract to the butter mixture, mixing until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
Knead the dough gently on a floured surface until smooth, about 2-3 minutes.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Roll out the chilled dough on a floured surface to your desired thickness.
Transfer the rolled dough to a pie or tart pan, pressing it into the edges.
Trim any excess dough from the edges of the pan.
Prick the bottom of the pastry with a fork to prevent bubbling.
Bake in the preheated oven for 20-25 minutes or until golden brown.
Remove from the oven and let cool before filling as desired.
