salt, to taste
1/4 cup (60ml) water
1 small onion, finely chopped
1 tbsp olive oil
2 garlic cloves, minced
1 tbsp (6g) sweet paprika
1 tsp (3g) hot paprika
1 tbsp (10g) all-purpose flour
1 cup (240ml) chicken or vegetable stock
1 tsp (5g) vinegar
salt and pepper, to taste

Heat 2–3 tbsp olive oil in a large skillet.

Add 1 kg potatoes, cut into 1-inch chunks, and season with salt to taste.

Cook for a few minutes until the potatoes turn lightly golden.

Add 1/4 cup (60ml) water and cover the skillet.

Simmer until the water evaporates.

Continue cooking until the potatoes are tender inside and golden crisp on the outside.
