Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups tomato juice
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp cumin
  • 1-2 jalapeño peppers, seeded and chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. 1In a large bowl, combine the chopped tomatoes, cucumber, bell pepper, red onion, and garlic.
  2. 2Add the tomato juice, olive oil, red wine vinegar, and cumin to the bowl.
  3. 3Stir in the chopped jalapeño peppers, adjusting the amount based on your spice preference.
  4. 4Season with salt and pepper to taste.
  5. 5Blend the mixture using a blender or food processor until smooth, or leave it slightly chunky if preferred.
  6. 6Chill the gazpacho in the refrigerator for at least 2 hours to allow the flavors to meld.
  7. 7Serve in bowls, garnished with additional chopped vegetables or herbs if desired.

Instructions

  2. 2Chop the zucchinis into chunks and add them to the blender with the avocado.
  3. 3Pour in the vegetable broth, yogurt, lime juice, cilantro, garlic, salt, black pepper, cumin, and chili powder (if using).
  4. 4Blend the mixture on high until smooth and creamy.
  5. 5Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
  6. 6Transfer the soup to a bowl or container and refrigerate for at least 1 hour to chill.
  7. 7Once chilled, stir the soup again before serving.
