Welcome and introduce the recipe for baked fish.
Select fresh snapper, noting it should have a bright color and bulging eyes.
Clean and gut the snapper, then dry it well to ensure a crispy skin.
Remove the dorsal and lateral fins from the fish.
Make cuts on both sides of the fish for better flavor penetration.
Season the fish inside and out with juice from half a lime, salt, and black pepper.
Prepare the vegetables by slicing red and green bell peppers and onion into strips.
Chop a few cloves of garlic finely for seasoning the fish.
Peel and slice potatoes into approximately 1-inch thick rounds and place them in a baking dish with olive oil and salt.
Add the sliced onion and bell peppers on top of the potatoes in the baking dish.
Place the snapper on top of the vegetables in the baking dish.
Stuff the cavity of the fish with chopped garlic, fresh parsley, and lemon slices.
Drizzle more olive oil over the fish for added juiciness and browning.
Bake in the oven at 220°C (428°F) for 20 to 25 minutes to ensure the fish remains juicy and the skin is crispy.
While the fish is baking, prepare a garlic and parsley butter to add at the end.
Melt butter in the microwave or on the stove, then add finely chopped garlic and parsley to it.
Once the fish is cooked, check that the flesh is white and fully cooked before serving.
Top the fish with the prepared garlic and parsley butter before serving.
