Heat the milk over medium heat until it reaches 185 to 190°F, stirring occasionally until hot, then stir constantly to avoid burning.

Prepare a large stainless steel bowl, a strainer, and cheesecloth for straining the curds.

Using a skimmer, transfer the curds into the cheesecloth, breaking them apart if necessary.

Wear kitchen gloves to handle the hot cheese and twist the cheesecloth to squeeze out excess whey.

Transfer the curds into a large bowl and knead with table salt for about 2 to 5 minutes, depending on desired texture.
