Scoop out the thick cream from the top of the milk and mix it with a good pinch of salt, then refrigerate.

Place 2 liters of fresh full fat milk in a big pot and bring it to a quick simmer, not boiling.

Once little bubbles start to form, turn off the heat and add 1 cup of white vinegar.

Cover the milk and let it stand for 45 minutes to separate the curds from the whey.

Drain the curds into a big colander to separate the cheese from the liquid.

Press out all of the moisture from the curds using a fine mesh strainer.

Add salt to the curds and mix vigorously to incorporate evenly.

Mold the cheese into elongated forms and place it on top of a banana leaf.
