Heat 1 gallon of whole milk in a 6.9 quart pot over medium to medium-low heat until it reaches 190 degrees Fahrenheit, stirring to prevent scalding.

Add 1/4 cup lime juice and stir constantly for about 5 minutes, then add another 1/4 cup lime juice and continue stirring until the milk separates, about another 5 minutes.

Turn off the heat and let the mixture sit for 20 to 30 minutes.

Strain the curds through a cheesecloth and strainer, squeezing out excess moisture.

Add salt to taste, starting with 1 teaspoon and adjusting as needed.

Pack the curds into a storage container, pressing down firmly, and refrigerate for several hours or overnight.
