1 tomato, chopped
2 pounds chicken parts
1 onion, finely chopped
1/2 cup chopped cilantro, divided
2 tablespoons cilantro
1 serrano pepper, stemmed and seeded
2 dried black limes, holes punched in each one
1.5 teaspoons ground turmeric
1 teaspoon ground cumin
2 teaspoons cinnamon, separated into two 1 tablespoon portions
1 teaspoon ground cardamom
2 garlic cloves
1 inch piece of ginger, chopped
2 tablespoons butter
1/4 cup lemon juice
3 tablespoons rose water
3 tablespoons canola oil, separated into 2 and 1 tablespoon portions
2 teaspoons salt, separated into 1 teaspoon for the chicken and 1 teaspoon for the rice
2 teaspoons baharat spice mix
1/2 tablespoon ground black pepper
1/4 tablespoon ground coriander
1/4 tablespoon ground cloves
3/8 tablespoon cumin
1/8 teaspoon ground cardamom
1/2 teaspoon ground nutmeg
1/2 tablespoon paprika
1 pita bread, cut into pieces
plum tomatoes
cucumbers
romaine lettuce or other non-bitter lettuce

Make baharat spice mix by grinding black pepper, coriander, cloves, cumin, cardamom, nutmeg, and paprika. Set aside.

Sprinkle half of the spice mix over chicken parts and coat well.

Heat 2 tablespoons of canola oil in a large saucepan. Add chopped onion and sauté until golden.

Add serrano pepper, dried black limes, and chicken parts. Turn chicken to coat.

Add 1 teaspoon of cinnamon and the remaining spice mix. Turn chicken several times to coat.

Cover and cook on medium heat for 3 minutes.

Add minced garlic, chopped ginger, and diced tomato. Turn to mix and cover to cook for 3 more minutes.

Add 1 teaspoon of salt and pour in warm water. Cover and let simmer.

Rinse basmati rice until water runs clear and soak in water for 10 minutes. Drain and set aside.

Preheat oven to 400°F. Remove chicken to a baking dish, brush with canola oil, and sprinkle with remaining cinnamon. Bake in the oven at 400°F.

Add drained rice to the pot with rose water, lemon juice, and butter. Cover and cook for 20 minutes or until water is absorbed.

Remove chicken from the pot and dried limes from the rice before serving.

Fry pita chips in olive oil until crispy.

In a large bowl, mix lettuce, diced tomatoes, diced bell pepper, torn mint leaves, cucumber slices, and optional chopped parsley. Dress with lime juice and garlic, season with salt and pepper, and mix in pita chips.

Plate servings of rice, place chicken on top, dress with remaining cilantro, and serve.
