1

Chop the rump steak into small bite-sized pieces.

2

Season the meat well with salt, pepper, and garlic powder.

3

Set a pot on the stove while it is still off and add the meat.

4

Cover the pot with a lid and turn the heat to medium.

5

Let the meat cook slowly for about 20 to 30 minutes, stirring every 5 minutes and covering again.

6

After most of the liquid has evaporated, remove the lid and turn the heat up slightly to brown and caramelize the meat.

7

The meat is ready when it looks golden brown and the bottom of the pot is caramelizing.

8

While the meat is cooking, dice the white onion and chop fresh cilantro.

9

Cut the limes in half and squeeze out the juice.

10

Slice the avocados in half, remove the pit, and scoop the flesh into a bowl.

11

Mash the avocado with a fork, leaving it a little chunky.

12

Mix in the diced onion and cilantro, and add salt and lime juice to taste for the guacamole.

13

Heat a non-stick pan until really hot and sprinkle in some grated mozzarella until crispy.

14

Place a corn tortilla on top of the melted cheese to stick it together and flip to warm through.

15

Place the tortilla with cheese on a plate and add a spoonful or two of the cooked steak on top.

16

Top the steak with the prepared guacamole.
