1 teaspoon salt
1 tablespoon Spanish paprika
1 teaspoon cumin
1 teaspoon chili powder
2 tablespoons vegetable oil
1 teaspoon Italian seasoning
1 teaspoon coriander
1/2 lemon, juiced
1/4 cup cilantro, chopped

Prepare the Spanish style seasoning by mixing Italian seasoning, chili powder, salt, garlic powder, cumin, Spanish paprika, and coriander in a bowl.

Coat the chicken breast in half of the vegetable oil.

Add half of the prepared seasoning (about 4 teaspoons) to the chicken and mix well.

Heat a tablespoon of vegetable oil in a pan over medium heat.

Add the seasoned chicken pieces to the pan and cook for about 2 to 4 minutes per side until browned.

Remove the chicken from the pan and set aside.

In the same pan, add rice, chicken broth, juice from half a lemon, and the remaining Spanish seasoning. Mix well.

Bring the mixture to a boil.

Add the chicken back into the pan, cover, and reduce heat to low. Cook for 20 to 25 minutes until the liquid is absorbed and the rice is tender.

After 23 to 25 minutes, remove the lid and check the dish.

Add sliced lemons and fresh chopped cilantro on top for garnishment.
