Tortillas con Quesillo

2 cups masa harina
1/2 tsp salt
1 1/4 cups warm water
1 cup quesillo cheese (or mozzarella)
1 tbsp vegetable oil (for cooking)

In a mixing bowl, combine masa harina and salt.

Gradually add warm water to the masa harina, mixing until a dough forms.

Knead the dough for about 2-3 minutes until smooth and pliable.

Divide the dough into 8 equal portions and roll each portion into a ball.

Using a tortilla press or a rolling pin, flatten each ball into a thin circle.

Heat a skillet or griddle over medium-high heat and lightly grease with vegetable oil.

Cook each tortilla for about 1 minute on each side until lightly browned and cooked through.

Remove the tortillas from the skillet and keep warm in a clean kitchen towel.

Place a slice of quesillo cheese on one half of each tortilla, fold over, and cook for an additional 1-2 minutes until the cheese melts.
