Start by preparing the dough using 1.5 cups of masa seca and a little more than 1.5 cups of warm water.

Knead the masa until it is soft.

For beginners, demonstrate how to shape the masa into small balls for tortillas.

Heat the comal (griddle) and clean it well.

Flatten the masa ball into a tortilla and place it on the comal.

While the first tortilla is cooking, shape another masa ball into a tortilla.

Flip the first tortilla when it starts to change color and puff up, indicating it is ready.

Once the tortillas are puffed and cooked, remove them from the comal and let them cool.

Prepare a side dish (symbolito) with chopped tomato, sweet chili, onion, radish, cucumber, and cilantro, seasoned with a drop of Tabasco sauce, lime, salt, and spices.

Grind a mixture of black pepper and cumin to add to the vegetables.

Set the prepared vegetables aside.

Assemble the tortillas by adding the desired amount of quesillo inside each tortilla.

Heat oil in a deep fryer until hot, then fry the tortillas until they are crispy and golden brown, adjusting cooking time based on preference.

Once the quesillo is melted and the tortillas are to your liking, remove them from the oil and serve with the prepared side dish.
