Chop the end off the cilantro and pluck the leaves off the stems.
Roll up the cilantro and mince it.
Roll out two limes and cut them in half for juicing.
Dice one small jalapeño, being careful not to touch your eyes afterwards.
Gather all ingredients for the marinade.
In a bowl, combine 1/4 cup olive oil, 1/2 teaspoon kosher salt, 1/2 cup freshly squeezed orange juice, 2 tablespoons white vinegar, 1/4 teaspoon ground black pepper, 4 minced garlic cloves, and 1 cup freshly cut cilantro.
Add the diced jalapeño and squeeze in the juice from the lime halves, whisking the mixture together.
Marinate flank steak in the marinade for at least 2 hours, up to overnight, ensuring to remove air from the bag.
Heat a cast iron skillet on medium to high heat and add oil.
Cook the marinated flank steak for 4-5 minutes on one side until a nice sear forms.
Flip the steak and cook for an additional 3-5 minutes.
Check the internal temperature of the steak, aiming for at least 135°F at various thick points.
Once the desired temperature is reached, remove the steak and let it rest for at least 10 minutes.
Slice the steak against the grain for tenderness.
