1

Prepare the marinade by combining orange juice, pineapple juice, and lime juice in a cup.

2

Add 1 tablespoon of apple cider vinegar, 1/4 cup of olive oil, 1 tablespoon of salt, and 1 tablespoon of black pepper to the cup.

3

Include garlic, onion, oregano, cumin, 2 tablespoons of smoked paprika, 2 teaspoons of chili powder, and 3 tablespoons of achiote to the mixture.

4

Blend all the marinade ingredients together for about 20 to 30 seconds until well mixed.

5

Place 2 lbs of skirt steak in a glass bowl and pour the marinade over the steak, rubbing it in to ensure it's coated.

6

Cover the bowl with plastic wrap and refrigerate for 2 to 4 hours, or overnight for best results.

7

Prepare the grill by starting a fire with leftover charcoal and adding some mesquite wood for flavor.

8

Once the grill reaches 550 degrees, clean the grill grates with half an onion, making crisscross cuts in the onion to help clean the grates effectively.

9

Place the marinated steak on the grill and cook until desired doneness is achieved.
