Show ingredients: chicken strips, marinated in fajita seasoning, onions, bell peppers, cilantro lime rice ingredients, and pinto beans made in the Instant Pot.

Chop cilantro leaves, about half a cup, and add to a bowl with lime zest and lime juice from 3 limes.

Add about 2 teaspoons of kosher salt to the cilantro mixture.

In a very large pot, add 4 cups of dry jasmine rice and 6 cups of chicken broth (using 2 cans of 14.5 oz each and half a can of water).

Add 1 tablespoon of olive oil to the rice mixture.

Bring the rice to a boil, then cover and cook on low for 15 minutes.

In a non-stick pan, heat canola oil over medium-high heat and add marinated chicken strips.

Cook chicken until browned, checking temperature to ensure it reaches 165°F.

Once chicken is cooked, set aside and add onions and bell peppers to the pan, cooking until desired tenderness.
