Mix flour, baking powder, and salt in a bowl.
Make a well in the dry ingredients and add water and olive oil.
Mix until the dough comes together, adding more water if necessary.
Knead the dough on a floured surface for about 2-3 minutes until smooth.
Cover the dough with a tea towel and let it rest for 10 minutes.
Roll the dough into a cylinder and cut off a piece the size of a golf ball.
Flatten the piece with your hands and roll it out thin with a rolling pin.
Preheat a cast iron frying pan until very hot.
Cook the rolled dough in the hot pan for about 25-30 seconds until bubbles form on the surface.
Flip the dough and cook for another 20-25 seconds until browned on the other side.
