1

Cut the butternut squash in half and peel it with a knife.

2

Scrape out the seeds with a spoon and cut the squash into bite-sized chunks.

3

Preheat the oven to 375°F.

4

Place parchment paper on a baking sheet and spread the butternut squash on it.

5

Drizzle olive oil over the squash and add salt, massaging it in.

6

Roast the squash in the oven for about 40 minutes, checking it occasionally.

7

Prepare the gluten-free enchilada sauce by heating chicken stock in a stock pot over medium-high heat.

8

Add chili powder, garlic powder, ground cumin, cinnamon, sugar, and guitar semi-sweet baking chocolate to the stock and whisk until dissolved.

9

In a bowl, mix 8 tablespoons of cold water with 6 tablespoons of Bob's Red Mill flour to create a thickening mixture.

10

Once the stock simmers, slowly add the thickening mixture while whisking to avoid lumps, cooking for 2-3 minutes until thickened.

11

Remove the roasted butternut squash from the oven.

12

Grate mozzarella cheese and prepare finely diced onion, drained corn, and drained black beans.

13

Heat olive oil in a small pan to about 350°F for frying the corn tortillas.

14

Dip the tortillas in the hot oil, flipping them to coat, and then place them on a paper towel-covered plate to absorb excess oil.

15

In a 9 by 13 baking dish, spread a thin layer of enchilada sauce on the bottom.

16

Layer corn tortillas on top of the sauce, followed by half of the roasted butternut squash, half of the black beans, half of the corn, some onion, and a sprinkle of cheese.

17

Repeat the layering process, starting with enchilada sauce, then tortillas, remaining squash, black beans, corn, onion, and cheese.

18

Bake the casserole in the oven at 375°F for 15-20 minutes until hot and bubbly with melted cheese.

19

Drizzle sour cream over the top before serving.
