Cut about 6 cups of butternut squash into 1-inch cubes, toss with olive oil, salt, and pepper, and roast on a baking pan for about 25 to 30 minutes until tender.
Peel and slice 4 carrots into 2-inch long pieces, cut 1 red onion into chunky wedges, and slice 2 potatoes into 1-inch cubes for the Portuguese chicken bake.
Place the carrots, onion, and potatoes into the container for the Portuguese chicken bake and set aside.
For the Moroccan chickpea skillet, scrub and cut 1.5 bell peppers, half of a large onion, and about 2 cups of sweet potato into half-inch cubes, leaving the skin on.
Mince 6 garlic cloves for the honey garlic chicken and add to the container.
Once the butternut squash is roasted and tender, set it aside to cool for a few minutes.
Open all cans needed for the recipes, shred 2 cups of cheese, and cut up tortillas for the butternut squash and enchilada casserole.
In a large bowl, combine roasted butternut squash, 1 can of black beans (drained and rinsed), 1 can of corn (drained), and 2 cans of mild enchilada sauce (about 20 ounces). Mix well.
In a 9 by 9 inch baking pan, arrange the cut tortillas at the bottom, overlapping them to fill the spaces.
Pour half of the butternut enchilada filling over the tortillas, sprinkle with half the cheese, and repeat with another layer of tortillas and filling, topping with the remaining cheese.
Cover the casserole with foil to freeze, patching any holes if necessary, and plan to bake it with a reusable silicone cover after removing the foil.
