Traditionally served during festive occasions and family gatherings, it reflects the resourcefulness of home cooks who combine various proteins and flavors into a hearty, comforting meal. Today, it remains a staple in Cuban households and is enjoyed by many beyond the island, often adapted to include local ingredients.

Canned tuna is more affordable and still provides protein.
Put chopped chicken in a pot with 1 liter of water to make broth, adding salt, 1/2 onion (not chopped), bay leaves, and optional black pepper balls.
Once the chicken is cooked, remove it and strain the broth.
Prepare the rice using 2 cups of chicken broth instead of water, adding yellow food coloring and salt if necessary.
Once the chicken cools, shred it.
In a skillet, sauté the onion, bell pepper, and garlic.
Add spices, tomato sauce, and a couple of ladles of broth.
Stir in the shredded chicken, adding more broth if necessary and tasting for salt.
Cook for a few minutes until the sauce thickens.
To assemble, use a glass dish or a flat-bottomed container, greasing it with oil or butter.
Start with a layer of rice, pressing it down with a spoon, followed by a thin layer of mayonnaise (amount is optional).
Add a layer of chicken, followed by cheese, and repeat the process.
Finish by running a knife along the edges and unmolding.
Cover the top with cheese and place in the microwave to melt.
Decorate with strips of roasted red peppers and olives.
