Mix warm water and yeast in a mixing bowl; let sit for about 5 minutes until bubbles form.
Add flour and salt to the yeast mixture; melt butter and add it in.
Mix the dough using a machine for about 5 minutes or knead by hand for about 10 minutes until smooth.
Cover the dough with cling film and let rise for about 2 hours until doubled in size.
Divide the dough into 10 equal pieces and shape into balls, creating tension on the surface.
Place the rolls on a baking sheet lined with greaseproof paper and let rise for another 20-30 minutes.
Boil water and add baking soda carefully to prepare the baking soda bath.
Boil the rolls in the baking soda bath for about 30 seconds on each side.
Remove the rolls and place them back on the baking sheet.
Score a cross on top of each roll and sprinkle with flaked sea salt.
Bake in the oven at 210°C for 16 minutes until golden brown.
