1

Soak corn husks in hot water for about 30 minutes to make them pliable.

2

In a bowl, combine 3/4 cup sweet corn, 1/2 cup sugar, and 3/4 cup melted butter.

3

Add 1/4 cup flour, 4 teaspoons cornmeal, and 1 teaspoon baking powder to the mixture and mix until combined.

4

Prepare a filling bar with cheddar cheese and mild Anaheim chili for customization.

5

Take a soaked corn husk and lay it on the palm of your hand.

6

Scoop a portion of the masa mixture onto the husk and spread it around, leaving space at the edges.

7

Add strips of cheddar cheese and mild Anaheim chili on top of the masa.

8

Fold the sides of the husk over the masa and filling, then tuck and roll it up tightly.

9

Square off the end of the tamale and place it in the steamer.

Repeat the process until all tamales are assembled and placed in the steamer.

11

If tamales are falling over, crumple aluminum foil and place it in the steamer to keep them upright.
