Peel the potatoes and chop them into small cubes, about a third the size of roast potatoes.
Chop the onion in half, peel off the skin, and slice it finely.
Heat a pan on high heat and add the chopped onion to soften it.
Grate the garlic directly into the pan with the onion.
Add chopped tomato to the pan.
Stir in about a third of a teaspoon of cumin, a third of a teaspoon of crushed chilies, and one and a half teaspoons of smoked paprika.
Season with salt and a generous amount of pepper, then stir and cook it down.
Add one teaspoon of honey to the sauce and mix it through, cooking on low heat.
Pour hot water over the chopped potatoes and let them sit for at least five minutes.
Drain the potatoes, pat them dry, and return them to a dry bowl.
Pour a couple of tablespoons of olive oil over the potatoes and mix to coat them evenly.
Preheat the air fryer for five minutes.
Add the potatoes to the air fryer and cook them.
After 10 minutes, take the potatoes out and give them a shake, then add chopped chorizo.
Cook for an additional three to four minutes until the potatoes are crispy and golden.
Blitz the sauce mixture until smooth and set aside to cool.
Serve the crispy potatoes topped with the sauce.
