Vegan Gyoza

14 oz firm tofu crumbled
2 leaves of cabbage finely chopped
1 inch of ginger minced
1 clove of garlic minced
1 small carrot finely diced (1/3 cup total)
100 gr mushrooms chopped into small pieces
1-2 green onions/ scallion finely sliced
2 tsp oatmeal
1 tbsp soy sauce
1/4 tsp salt
1/8 tsp pepper
1 tsp sesame oil
50 gyoza dumpling wrappers
1 tbsp oil per batch of 15-18 gyoza for steaming and pan-frying
1 tbsp soy sauce (for gyoza sauce)
1 tbsp rice vinegar
1 tbsp maple syrup
2-3 ginger slices
1 tsp finely sliced green onion

Prepare the gyoza filling by crumbling the firm tofu into a bowl.

Finely chop the cabbage and add it to the tofu.

Mince the ginger and garlic, then add to the mixture.

Finely dice the carrot and add it to the filling.

Chop the mushrooms into small pieces and add to the bowl.

Finely slice the green onions/scallions and mix them in.

Add the oatmeal, soy sauce, salt, pepper, and sesame oil to the filling and mix well.

Take a gyoza wrapper, place a spoonful of filling in the center, and fold the wrapper to seal it.

Heat oil in a pan and place the gyoza in batches for steaming and pan-frying.

Prepare the gyoza sauce by mixing soy sauce, rice vinegar, maple syrup, ginger slices, and green onion.
