Add 1/2 onion and 1 clove garlic to the comal.

Once the chiles are roasted, place them in a large container and add 2 cups of water to hydrate them for about 10 minutes.

Season the mixture with salt to taste, a pinch of cumin, and a pinch of dried oregano.

Add 2 cups of the water used to hydrate the chiles to the blender, cover, and blend until smooth.

In a saucepan, add 1 tablespoon of lard and heat it over high heat until melted.

Add 500 grams of pork meat cut into medium pieces and season with salt to taste.

Add the peel of an orange to the pork and mix well.
