Add half of the red bell pepper, half of the red onion, and garlic to the pot; sauté until fragrant.

3

Add quinoa to the pot after a few minutes of sautéing the vegetables.

4

Add one can of diced tomatoes (reserve juice for later) and one can of kidney beans that have been washed and rinsed.

5

Add dry spices: cumin, chili powder, and optionally paprika and cayenne pepper; season with salt.

6

Pour in two cups of water, including the reserved juice from the diced tomatoes; mix well.

7

Cover the pot and bring to a bubble, then reduce heat to low and let simmer for about 10 to 15 minutes until quinoa absorbs the water.

8

Remove from heat and fluff the quinoa; let it cool slightly.

9

Add the remaining red bell pepper, red onion, and cilantro; mix well.

10

Add cucumber and avocado gently to avoid mashing; squeeze lime juice over the top.
