Peel and slice potatoes thinly.
Heat olive oil in a skillet over medium heat until shimmering.
Add sliced potatoes to the skillet and cook until tender, about 10-15 minutes.
Add chopped onions to the potatoes and cook until translucent, about 5 minutes.
Beat eggs in a bowl and season with salt and black pepper.
Drain excess oil from the skillet and add the potato-onion mixture to the eggs, mixing gently.
Return the mixture to the skillet and cook over low heat until the bottom is set, about 5-7 minutes.
Flip the omelette using a plate and cook the other side until set, about 5 minutes more.
Remove the omelette from the skillet and let it cool slightly.
Slice the omelette into portions.
Place a portion of the omelette between slices of bread.
Garnish with parsley and serve.
