Today, carne asada is not only a staple in Mexican cuisine but has also gained popularity in the United States, often served at barbecues and taco stands, showcasing its versatility and beloved flavors.

Dice cilantro finely.
Add 3 cloves of garlic (or garlic paste or garlic powder) to the mixing bowl.
Add the juice and zest of 1 lime to the bowl.
Pour in extra virgin olive oil.
Add cane sugar (or brown sugar, maple syrup, or honey) to the mixture.
Add a big pinch of salt and a couple big dashes of cumin.
Mix everything together and taste for seasoning.
Add tri-tip steak to the marinade and ensure it's well coated.
Transfer the marinated steak to a large ziploc bag and refrigerate for up to 4 hours.
Remove steak from the fridge and let it sit at room temperature for at least 30 minutes before grilling.
Prepare the grill with coals on one side for high heat and no coals on the other side for low heat.
Sear the steak on the high heat side to get good color and grill marks.
Move the steak to the cooler side of the grill with the lid down to finish cooking.
Use a thermometer to check for doneness, aiming for 130-135°F for medium rare.
Once cooked, let the steak rest for 10-15 minutes to allow juices to redistribute.
Slice the steak against the grain.
